Upon summer solstice, Reversocollettivo launched the Atlas of Taste meta-research, bringing together local gastronomy experts, researchers, cultural practitioners and producers for a Sobremesa exchange.

Gathered around boards of local cheeses and cured meats, extra virgin olive oil and artisanal bread, participants tasted the territory while discussing the unfolding research, its questions and its relevance to local communities. Producers were invited to introduce their practices and products. Maria Giovanna and Claudio, Sobremesa’s Italian referents, opened the conversation to collective reflection and participatory feedback. The Sobremesa format proved particularly effective: sharing food created space for spontaneous conviviality while fostering attentive listening and deeper exchange. The table thus became both a place of encounter and a research setting, allowing different forms of knowledge and experience to emerge through conversation.
