Food Hack Lab is a non-profit organisation in the Basque Country dedicated to researching, developing, and sharing technology related to food. It was founded in 2015 at Hirikilabs, the citizen lab of Tabakalera in San Sebastian, and since then it has worked at the intersection of FoodTech, free and open-source culture, maker practices, and collaborative experimentation. In this context, technology is understood in a broad sense: not only as devices or machines, but also as know-how, techniques, practical knowledge, cultural practices, and shared ways of doing. Its approach is therefore not limited to applying tools to gastronomy, but rather to exploring how open methods, prototyping, and collective intelligence can generate new ways of producing, transforming, understanding, and sharing food. This perspective extends into LURLAB, a core Food Hack Lab initiative conceived as a network of rural and peri-urban FABLABs and as an open ecosystem of spaces, tools, and methodologies rooted in community life. Through LURLAB, Food Hack Lab connects technology, maker culture, and territorial development, exploring how local capacities, distributed knowledge, and hands-on experimentation can strengthen rural communities and widen access to innovation. Its practical and open logic is central to this work: learning by doing, documenting processes, sharing knowledge, and enabling other people, groups, and places to replicate, adapt, and expand what has been developed.
